I love how specific this question is I got in my DMs! This is a super simple switch with a few different options. The most common option here is aluminum. There is extremely conflicting information out there about aluminum cookware and whether or not it’s safe. It is true that when used with acidic foods the acids react with metal and increase aluminum content in food. We are already exposed to aluminum in many other places like water, cans, medicines etc. So I say if you are using your money to get new cookie sheets opt for one of these options below.
Stainless Steel
Non Stick Ceramic (note, please make sure that you double check the company to make sure they are PFOA, PFTE, lead and cadmium free.)
If You Care Unbleached Parchment Paper is my choice for needing a lining.
